Plasterer-turned-chef Paul O’Callaghan is releasing his first cookery book.

Paul ran his own plastering business in his native Armagh but lost his business in the recession. He moved to Co Clare and, after growing his own food, he developed a passion for cooking, starting a food blog, thesustainablelarder.blogspot.ie.

Calso Cooks – Real Food Made Easy, published by Mercier Press, is out this month and is a no-nonsense guide to producing nutritious meals such as courgette carbonara and smoked haddock lasagne.
